Description
10 000–23 000 SHU. Named for the sierras (mountains) of Hidalgo and Puebla where it originated. Thin-walled, 3–6 cm fruits, harvested green or red. Second most popular pepper in Mexico after jalapeño. Crunchier and more intensely flavoured than jalapeño, without the smokiness. Used fresh in salsas, pico de gallo, and guacamole.
